Ingredients

  • 1 Prepared pie crust
  • 1 Tbsp olive oil
  • 1-2 garlic cloves, minced
  • 1/2 cup onions, finely diced
  • 3 handfuls spinach (about 1 cup - packed)
  • 5 large eggs, whisked
  • 1 cup ham, diced
  • 1/2 cup milk
  • 1/2 cup cheddar cheese, shredded
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper

Notes

This is a great recipe for breakfast, lunch, or dinner. It is also a great way to use up that leftover holiday ham!

Preparations

1.Preheat oven to 400°

2.Place prepared pie crust in a tart pan (one with a removable bottom). Let dough sit in the fridge until your mix is ready to pour in

3.Heat olive oil in a large pan over medium-high heat. Add onions and garlic and sauté for about 2 minutes, just until the onions and garlic are softened.

4.Add spinach leaves. Sauté together for another 2-3 minutes, just until the spinach leaves are wilted and soft.

5.Let veggie mixture cool for about 3-5 minutes.

6.In a large bowl, stir together onions, garlic, spinach, diced ham, whisked eggs, cheese, and spices.

7.Pour mixture into the pastry crust.

8.Bake in the middle rack at 400° for 30-35 minutes, or until crust and toppings are golden brown.

9.Let cool for 5-10 minutes before you enjoy.

Alternatives

  • Cheese - gouda, swiss, feta, muenster, pepper jack, cheddar jack, marble jack, white cheddar,  Monterey jack,  and mozzarella (low moisture) are all great substitutes for cheddar. Add 1/4 cup extra for a cheesier quiche
  • No shredded cheese? Add 1/3 cup of cottage cheese in place of the shredded cheese
  • Add spices - 1/2 tsp of basil, oregano, thyme, Italian seasoning, white pepper (1/4tsp), mustard powder, dried parsley, nutmeg (1/8tsp), or red pepper flakes
  • Garlic - use 1tsp of pre-minced garlic for every 1 garlic clove
  • Vegetarian - omit the ham and add 1 cup of diced veggies during step 3 of the PREPARATIONS phase. *You only want 1 cup of vegetables total, split your veggies however you'd like
    • bell peppers, mushrooms, broccoli, zucchini (thinly sliced), tomatoes (1/4 cup or less), green pas, carrots (thinly sliced or finely diced), green onion, corn, green beans, hash brown potatoes, roasted cauliflower
  • Milk - use any % milk you'd like,  half and half, or heavy cream
    • Dairy free - use unflavored/unsweetened almond milk, oat milk, soy milk
  • Garnish with grated parmesan, fresh herbs (basil, oregano, parsley), arugula, chopped chives, or crispy bacon bits
  • Ham - use leftover holiday ham or a ham steak. Pan fry the cubes of ham in 3/4Tbsp oil or butter for 5-7 minutes for a crispy, flavorful outside - remove ham before starting step 3 of the PREPARATIONS phase
  • Pie crust - make your own pie crust, herb-infused pie crust
  • No tart pan? use a regular pie pan, or spring form pan
